Anyone in Flagstaff who is hungry for southern food with a Mardi Gras twist, look no further. Bigfoot Barbecue is surprising patrons with Creole dishes, including a gator sandwich.

If you thought Flagstaff couldn’t get more eccentric, you’re mistaken. Flagstaff restaurant Bigfoot Barbecue has now joined a small pocket of businesses that are embracing the Cajun festivities of Mardi Gras- by adding an alligator sandwich to their menu. Bigfoot Barbecue, located in the Basement Marketplace, has recently secured itself in the hearts of locals as a favorite Flagstaff restaurant. Corina Schwimbach takes NAZ Today through the sandwich making process, which includes remoulade, fried “firecracker” onions, and blackened gator meat on a hoagie bun. Bigfoot Barbecue also has jambalaya, gumbo, beans and rice, just in case gator is not your cup of tea. Though this Flagstaff restaurant is literally underground, it seems to be making quite a name for itself in the mainstream.
